US meat processor deploys video auditing for quality control
The management of a large meat manufacturing company needed to ensure their safety and production policies and procedures were being followed. They also wanted to use auditing as a way to better position themselves in the market by being able to perform daily inspections on their quality control and processing procedures, versus the monthly or yearly inspections performed by their competitors. The company identified a number of key areas where they were interested in auditing, including meat and dry storage receiving, processing and preparation, packing, shipping docks, the quality assurance lab and the employee break room.

Tyco Integrated Security Video Auditing enables the company to leverage their existing quality control and production procedure, providing more functionality without a huge investment. With the service, the company can perform food safety and production audits (primarily focused on employee compliance to procedures), conduct quality control inspections, monitor food handling procedures, ensure evening shift cleaning compliance, detect whether any foreign objects are present in vats, and comply with equipment maintenance requirements.

The Tyco Integrated Security team determined that a total of 39 cameras were necessary to cover the company's auditing needs. Auditing cost is based on the number of cameras in combination with the number of audits to be performed. The proposed schedule of audits included an audit each day for each camera (an audit is up to 32 time frames per day) in addition to several ad hoc investigation audits. We recommended the frequency of audits at four times per week for food safety and three times per week for production audits. Two audit reports will be emailed weekly to select management, summarizing the compliance scores of the critical control points.
